Apple coleslaw

1 bag shredded coleslaw mix
1 gala or lady pink apple, julienned

DRESSING:
1/3 cup apple cider vinegar
1/3 cup brown sugar, packed.
3 Tbls light olive oil
salt and pepper to taste

**** put coleslaw mix in a colander,  sprinkle with kosher salt generously, let sit in sink for 2 hours. Rinse and pat dry before use (this prevents your cole slaw from becoming watery)****


mix cider vinegar, brown sugar, oil, salt and pepper with a whisk until well blended.

combine coleslaw mix and apple in a large bowl, toss with dressing, serve cold.
