Irish soda bread

4 cups flour 
3/4 c granulated sugar 
1 tsp baking soda 
1 tsp baking powder 
1/3 cup unsalted butter melted and cooled 
1 and 1/3 cup buttermilk 
One egg 
2 teaspoons orange zest 
3/4 cup Golden raisins or dried cranberries. (optional)

Preheat oven to 350°

Line of cast iron skillet or a cast iron Dutch oven with parchment paper. 

Whisk together the flour, sugar, baking soda, baking powder, and salt in a large bowl. Make a well in the center for the liquid ingredients. 

Whisk together the buttermilk egg and melted cool butter 

Add the liquid ingredients to the dry. Pouring it into the well. Stir to form a soft dough. The dough will be very thick and might need to be needed slightly to work in all of the flour. 
Add the golden raisins or dried cranberries 

Shape dough into a ball. Use lightly wet. Fingers if dough is sticky and transfer to the parchment paper lined pan. 

Bake for an hour to an hour and 11 minutes... Until a toothpick inserted in the center comes out clean. 

Allowed to cool for 30 minutes before you slice.
