Perfect Egg Bites
5 large eggs
1/4 cup Cream Cheese
1/4 cup Heavy Cream
1/4 onion diced, or bunch of chives, sliced
3 oz. of "mix ins" diced or chopped
pinch of salt and pepper
Mix in ideas:
Spinach & Feta
Ham & Swiss
Turkey Bacon & Cheddar
Taco meat & Mexican blend cheese
***Keep mix-in's to 3 oz. or you will overfill the muffin cups***
Put eggs, cream cheese and heavy cream, salt and pepper into a blender or shake maker
(I use my Ninja bullet, easy to use and clean)
blend until smooth.
Add onions/chives and mix ins, and pulse a few times to blend.
Spray a silicone egg bite or muffin mold with butter flavored Pam, or brush with oil of your choosing.
Pour the eggs into the molds filling them half way, then use a spoon to scoop out the mix-ins to ensure you get them evenly distributed.
Put the silicone lid on your mold, or cover with foil.
Put 2 full cups of water into your Ninja Foodi, then place the rack on the low position, with the egg mold on top. Steam for 14 minutes, remove immediately.
Allow egg bites to cool on the counter before putting in the fridge. I recommend removing the lid and wiping all moisture away before doing so.
To reheat, place in microwave 30-45 seconds.
Egg bites will last 5 days refrigerated.
