Bourbon & Maple Brined Turkey

Brine for 10-12 pound turkey, thawed.

2 quarts water
1.5 C kosher salt
1 C Bourbon
1.5 C pure maple syrup
1 sweet onion, peeled, quartered
1 orange, sliced
2 tbl. whole black peppercorns
2 sprigs fresh sage
1 quart fresh apple cider
2 quarts of ice


Combine water, salt, bourbon and bring to a boil, stir in rest of ingredients, remove from heat.
Stir in ice until melted and brine is cool.  Turkey may then be brined overnight.
