Bourbon BBQ Sauce

1 Tbls. Thyme, minced
1 1/2 vidallia onion, minced
6 cloves garlic, minced.
1 1/2 c. Jim Beam Bourbon
fresh ground pepper, to taste
kosher salt, to taste
4 c. REAL ketchup (recommend Simply Heinz)
2/3 c. cider vinegar
1 Tbls. liquid smoke
1/4 c. Worcestershire sauce
2/3 c. packed dk. brown sugar


bring onions, garlic & Bourbon to a simmer.  Continue to simmer for 10 minutes, or until onions are translucent.  Add remainder of ingredients, mix well, bring to boil.  Boil for one minute then reduce to simmer.  Simmer for 20 minutes.

Makes 2 batches of BBQ sauce. Can be stored in mason jar in fridge for a few weeks.
