Veggie & Feta Frittatas

Cooking spray
6 eggs
4 egg whites
2 cups baby spinach, stems removed, rough chopped
1 cup canned artichoke hearts, drained & chopped
1/2 cup roasted red peppers (packed in water) drained & chopped
1/2 cup scallions, sliced thin
1/2 cup low fat cream cheese at room temperature
1 cup crumbled feta cheese
pinch of salt
pepper to taste

preheat oven to 350 degrees.
coat 16 holes in muffin pans well with cooking spray
lightly beat eggs and egg whites, add cream cheese and continue to beat until smooth.
blend in the rest of ingredients.
Fill muffin cups using a 1/4 measuring cup.

bake for 20-24 minutes.

let cool in pan for 5 minutes, then go around edges with spatula to loosen.

2 WW points each.
