Pizzagaina

1 cup diced low sodium ham
1/2 c diced pepperoni
1/2 c diced hard salami
4oz prosiutto

8 oz basket cheese, diced
1/2 cup grated Parmesan cheese

4 hard boiled eggs, sliced

4 eggs, scrambled

15oz container ricotta

1/2 lb. italian ground sausage, browned and drained

2 pie crusts

mix 4 eggs with ricotta cheese until well blended, mix in cheeses and meats until blended.

put one pie crust in bottom of plate, fill with half of mixture. place a layer of sliced hard boiled eggs, finish with other half of mixture.

Top with pie crust, pinch / fold

bake at 400 degrees for 20 minutes, then 325 for 45 minutes more.  brush an egg white on crust during last 15 min of baking time
