Chilled Cucumber Dill Soup

5     large cucumbers, peeled, sliced lengthwise, seeded
1.5 c   Buttermilk
1 c   plain greek yogurt, lowfat
1.5  Tbls White Vinegar
2 tsp fruity olive oil
2 tbls snipped fresh dill
1 tsp chopped mint leaves
1/2 tsp ground coriander

2 tbls finely sliced chives or spring onions

put cucumbers, dill, mint, coriander, olive oil and Greek yogurt in a food processor or blender until smooth. blend in vinegar and buttermilk. pour into a seal-able container, stir in chives, add salt to taste, chill 2 hours. 

serve cold.
