Zucchini Tots

2 cups of shredded zucchini
2 eggs
1 bunch of scallions, sliced thin
1/2 cup shredded reduced fat sharp cheddar cheese
1/2 cup seasoned breadcrumbs
salt and pepper (or I use Lawrey's seasoned salt) to taste.

(makes 2 dozen tots)

Preheat oven to 400 degrees.
place the zucchini into a clean dish towel, wring out the zucchini to remove excess moisture
place eggs in bowl, lightly beat, add all other ingredients, mix well.

Spray a mini muffin pan generously with cooking spray
scoop zucchini mixture into muffing pan, using back of fork to press mixture firmly into cups, fill to top.

Bake 18-20 minutes until golden on top and sides.

Remove from oven, allow to cool 7-10 minutes

gently remove from muffin cups using a butter knife to un-pop tots from pan.
